~ Walnut & Mushroom Mince Tagliatelle ~

Thought I’d try a new way to have my favourite bolognese meal by making the mince with walnuts and mushrooms πŸ’š

This recipe was sent to me by my lovely friend tora_tabitha but I swapped a few things around – here’s what I done. Please hit save ⭐️ and let me know what you think in the comments below x

Ingredients:
100g of walnuts
200g of mushrooms
2 carrots diced
1/2 red onion diced
2 garlic gloves
1 tbsp of Italian herbs
1 tbsp of tomato purée
1 tin of chopped tomatoes
1 tsp of soy sauce
1 tsp of tomato ketchup
Spaghetti or tagliatelle
Olive oil

Method:
β€’Add the garlic, onion and carrots to a pan with olive oil. Fry for 5/10 minutes
β€’Meanwhile pop the mushrooms and walnuts in a food processor and pulse them.
β€’Add the mince to the pan along with the tomato purée, tin of tomatoes, tomato ketchup, soy sauce and season with salt and pepper. Bring to a simmer.
β€’Cook your pasta according to the packets instructions (if your mince needs a little water, add some pasta water)
β€’Once cooked, drain and add a little mince to the pasta – mix well.
β€’Serve the pasta topped with the mince and sprinkle with vegan cheeze – I used lidlgb
