~ VEGAN SOY KUNG PAO ~

If you have soy chunks in your cupboard, and you’ve no idea what to do with them, then make this! It’s delicious 💚

Serves 4:

•Mix 1 cup of soya chunks with 3.5 cups of vegetable stock for 15 minutes.
•Meanwhile make your Kung Pao sauce.
2 tbsp of coconut sugar
1/2 tsp of Chinese 5 spice
100ml of veg stock
4 tbsp of light soy sauce
2 tbsp of dark soy sauce
2 tbsp of rice vinegar
2 tsp of hoisin sauce
1 tsp of cornstarch mixed with a little cold water
•Mix together all your sauce ingredients and set aside.
•Chop half a red, orange and green pepper.
•Drain your soy chunks and squeeze as much liquid as you can out of them.
•Coat them with cornflour and pop some oil in a frying pan and fry for 5-10 minutes until they start to brown. Put them in a bowl and set aside.
•Pop some sesame oil in the same pan and fry off the peppers.
•Add two gloves of crushed garlic.
•After a few minutes add the Kung pao sauce and bring to a simmer.
•Add in the soy chunks.
•Simmer whilst you cook your rice.
•Enjoy
