~ Vegan Sausage Pesto Tart ~
A delicious lunch using up leftovers!
I had a small piece of puff pastry left over so although it was tempting to make something sweet with it, I had some richmond_foods vegan sausages leftover too so decided to make this. It only took 15 minutes to make so it’s perfect on days I have loads to do 💚
Roll out your puff pastry and cut into rectangles – I used aldiuk ready made puff pastry.
Score a border and spread your pesto in the middle. I used the last of my aldiuk vegan red pesto.
Grate your vegan cheese. I used applewood_cheese and spread on top of the pesto.
Cut your meat free sausages in half and lay on top of the cheeze.
Scatter some Italian mix herbs on top, lay down some cherry tomatoes and bake at 190 for 15 minutes.
Make up a nice side salad.
