~ Vegan Enchiladas ~
Fully loaded enchiladas with the cheesiest of sauce – this was a dream. I’ve not had enchiladas for ages, but after picking up my bargain vegan mince today (yellow sticker 55p) I had the urge to make them! 🌱
🍃 sainsburys vegan mince
🍃 Kidney beans
🍃 1 tbsp olive oil
🍃 1/2 red onion
🍃 1 tsp verylazyfooduk garlic
🍃 2 cans of chopped tomato
🍃 2 tbsp coconut sugar
🍃 1 tsp parsley
🍃 1/4 tsp cayenne pepper
🍃 1 tsp paprika
🍃 1 tsp harissa
The cheese sauce:
🍃 3 tbsp olive oil
🍃 3 tbsp flour
🍃 450ml soy milk
🍃 1 Tbsp dijon mustard
🍃 2 Tbsp nutritional yeast
🍃 1 tsp onion powder
🍃 1 tsp garlic powder
🍃 1/4 tsp smoked paprika
🍃 50g vegan cheese – I used violife_foods
Add chopped onion and garlic to a saucepan along with the olive oil and sauté until the onions soften for 5/10 minutes.
Pop the tins of tomatoes in a blender and blend until smooth
Add the blended tomatoes to the pan along with the sugar, parsley, cayenne pepper, paprika & harissa. Simmer for 15 minutes.
Add the mince to a separate pan and cook accordingly.
Once the mince is cooked, add to the tomato sauce and add the kidney beans. Simmer.
Meanwhile, make your cheese sauce.
Add the olive oil to a pan and let it heat. Then add in the flour and fry it briefly in the oil, stirring all the time.
Slowly add in your soy milk and whisk it to get rid of lumps.
Bring it to the boil stirring all the while, for a few minutes until it thickens.
Add in the cheese.
Remove from the heat and add in the dijon mustard, nutritional yeast, onion powder, garlic powder, smoked paprika and salt & pepper.
Pop a little sauce in the base of your oven proof dish and fill each wrap.
Top with the cheese sauce and pop it in the oven fan 180 for 15 minutes.
I then topped mine with chillis, avocado, cherry tomatoes and coriander 🌿
