~Vegan Creamy Sun-Dried Tomato Pasta~
This sauce is heaven! Super easy to make and it’s so full of flavour. I will never tire of this recipe 🌱

•Warm some oil in a frying pan and add 2 tsp of verylazyfooduk garlic. Simmer for 2 minutes.
•Stir in 1 tsp of Italian herbs, 70g of sun-dried tomatoes in oil, two or three tomatoes chopped and 1 tbsp of flour. Stir to combine and heat for a couple of minutes.
•Add some plant based milk a little at a time to make a sauce. I use oat milk straight from the carton but I’d guess it would be around 200ml. Bring to a simmer.
•Stir in 1 tbsp of tomato paste and 1 tbsp of vegan Parmesan. I used violife_foods .
•Transfer sauce to a blender, add in around 1tbsp of nooch and blend until smooth. I used my ninjakitchenuk blender.
•Pop the sauce back in the pan.
•Cook pasta according to the packs instructions. Once cooked, add 1 tbsp of pasta water to the sauce, drain then add the pasta to the sauce.
•Stir and serve!
•I topped mine with some basil, a little Parmesan and cherry tomatoes.
