•Vegan Creamy Butter Cauliflower & Chickpea Curry•
My Friday night feast and WoW what a delicious meal this was! Definitely worth hitting that save button if you love curry and love veg ⭐️ Super creamy and full of flavour 🍛
Method – served 4
🌱 Add 1 tbsp of vegan butter to a pan and add in half a chopped onion. Fry for 5 minutes.
🌱 Add to the pan 3 tsp of garam masala, 2 tsp ground coriander, 2 tsp turmeric, 2 tsp cumin, 1 tsp of chopped garlic – I used verylazyfooduk and heat for one minute.
🌱 Add to the pan 1 chopped cauliflower and coat in the spices.
🌱 Add 1 tbsp of tomato purée and stir.
🌱 Finally add in 1 tin of coconut milk, 400ml passata, 1 tin of chickpeas and your chosen veg – I used green beans and peas.
🌱 Simmer away for half an hour or until your veg has cooked.
🌱 I served mine with rice, garlic naan and mango chutney
