~ Vegan Butter Tofu Curry ~

Boom! Happy Friday everyone!

There was only one meal that was going to bring me satisfaction tonight, and that was a delicious curry with garlic naan ๐Ÿ›

Serves 4

For the curry:
๐Ÿƒ 2 Tbsp dairy-free butter
๐Ÿƒ 1 onion – chopped
๐Ÿƒ 2 tsp garam masala
๐Ÿƒ 2 tsp ground coriander
๐Ÿƒ 2 tsp ground cumin
๐Ÿƒ 2 tsp ground turmeric
๐Ÿƒ 2 garlic cloves
๐Ÿƒ 1 Tbsp tomato pureฬe
๐Ÿƒ 400 ml passata
๐Ÿƒ 200 ml soya cream – I used alpro
๐Ÿƒ salt and black pepper
For the tofu puffs:
๐Ÿƒ 1 block of tofu – I used tofooco
๐Ÿƒ 4 Tbsp cornflour
a large pinch of salt
๐Ÿƒ Vegetable oil, for frying
To serve:
๐Ÿƒ 200g brown rice
๐Ÿƒ Coriander
๐Ÿƒ Tikka Chikโ€™n – squeakybeanveg

โ€ขFor the curry, add 1 tbsp dairy-free butter to a frying pan or casserole and set over a medium-high heat.
โ€ขPeel and chop the onion and add it to the pan with a pinch of salt. Fry for 3-4 minutes, stirring occasionally.
โ€ขAdd the spices and cook for 1 minute.
โ€ขAdd the garlic and the tomato pureฬe and fry for 2 minutes.
โ€ขPour the passata into the pan, bring to the boil, then reduce to a simmer. Leave to bubble while making the puffs.
โ€ขFor the tofu puffs, pour a 1cm (ยฝin) depth of oil into a second frying pan and set it over a high heat.
โ€ขPat the tofu dry with kitchen paper and tear it into bite-size chunks. Put the cornflour and salt into a sandwich bag and add the tofu – shake until the chunks are well dusted.
โ€ขPop the tofu into the hot oil and cook until golden, crispy and puffed up, raising the heat if needed (should take around 5 minutes). Drain on the plate lined with kitchen paper.
โ€ขCook the rice according to packs instructions.
โ€ขReturn to the curry and add the cream and the remaining tbsp of dairy-free butter to the pan. Season with salt and pepper. Tip the puffed tofu into the curry sauce and stir until coated.
