~ Vegan ‘Beef’ & Black Bean ~
Not quite the roast I had planned but this was super yummy 💚
I used the tescofood beef style pieces and a homemade black bean sauce with added kidney beans leftover from another meal 🌱

For the sauce, chop half an onion and one red pepper and add to a pan with a little sesame oil – fry for a couple of minutes.
Add two cloves of garlic and fry for another couple of minutes.
Add to the pan a tin of black beans (including the liquid) a good squeeze of maple syrup, around 100ml of veg stock, soy sauce and simmer for around 10/15 minutes.
