~ Tofu Chocolate Chilli ~
Yup you read that right, tofu chocolate chilli and it was AMAZING!

•Press your tofu and set aside.
•Heat a little oil in a pan and add half a chopped onion, fry for a few minutes before adding two gloves of crushed garlic.
•Add to the pan 1/2 tsp of cumin, 1/2 tsp of coriander, 1 tsp of chilli powder, 2 tsp of smoked paprika, 1/2 tsp of cayenne pepper.
•Once mixed in, add in one jar of passata, 150ml of veg stock, 40g of dark chocolate, one drained tin of kidney beans, one drained tin of sweetcorn and season with salt and pepper. Bring to a simmer.
•Add oil to a pan and crumble your tofu into small pieces. Fry for 5/10 minutes until it starts to crisp. Add to the chilli pan and simmer.
•Whilst your chilli is simmering, cook your rice according to the packs instructions.
•Time to dish up! I served mine with smashed avocado, cheeze, coriander and mini tortilla bowls.
