~ Thai Coconut Veg & Noodle Curry ~
What a dish! 🍜 My obsession on all things noodles continues….
Tonight for tenderlyvegan I’m off to beautiful Thailand 🇹🇭 which is going to be my next holiday destination 🌎 I’ve found the resort, I just need Covid to do one so I can book!
This dish was delicious, full of flavour and packed with goodness 💚

•Cook the noodles (I used around 150g) in boiling water according to the packets instructions. Once boiled, pop in a bowl of cool water and set aside.
•In a pan, add some sesame oil and add 3 chopped spring onions, 2 cloves of crushed garlic, 1 stick of chopped lemongrass and a little ginger – cook for 3 – 5 minutes.
•Add to the pan 1 sliced red pepper, 1 sliced yellow pepper, chopped pak choi and some broccoli. Add in 1 tbsp of curry powder, 1 tsp of cumin and 1 tsp of chopped coriander. Pop the lid on the pan and cook for 10 minutes.
•Add one tin of coconut milk, 300 ml of veg stock, juice of one lime, around 3 tbsp of soy sauce and 1 tbsp of maple syrup. Simmer for 10 minutes.
•Drain the noodles and add them to the pan. Reduce the heat, pop the lid of and simmer for around 10 minutes until some of the liquid has been absorbed.
•Top with sliced chillis, parsley or coriander and some sesame seeds.
