~ Tempeh Katsu Curry ~

Travel Tuesday is here again and I’m off to Japan this week πŸ‡―πŸ‡΅ Creating this delicious katsu curry with a creamy, tasty sauce 🌱

This is definitely a recipe that’s worth trying out – here’s how I made it ⭐️

~

For the tempeh:
πŸƒ 1 block of tempeh
πŸƒ 1 Tbsp soy sauce
πŸƒ 1 tsp curry powder
πŸƒ 1 tsp Chinese 5 spice
πŸƒ Few drops of liquid smoke
πŸƒ 1 tsp oil

For the sauce:
πŸƒ 1/4 red onion – chopped
πŸƒ 2 green onions – chopped
πŸƒ 1 carrot – chopped
πŸƒ 1 tsp ginger
πŸƒ 1/2 tsp Chinese 5 spice
πŸƒ 1/2 tsp curry powder
πŸƒ 1/2 tsp garam masala
πŸƒ 2 Tbsp peanut butter
πŸƒ 1 Tbsp brown sugar (or coconut sugar)
πŸƒ 2 Tbsp soy sauce
πŸƒ 150 ml water
πŸƒ oil
πŸƒ A little soy cream (optional)

β€’Pre heat your oven to 180 fan.
β€’Mix the tempeh ingredients together. β€’Chop your tempeh and pour over sauce – leave to marinade for 20 minutes.
β€’Pop your tempeh on a lined baking tray and heat in the oven for 15/20 minutes.
β€’To make the sauce, heat some oil in a pan and add your chopped red onion, green onion, carrots and ginger. Cook for 5 minutes or until the onions have softened.
β€’Add the spices, peanut butter, sugar, soy sauce and water to the pan, bring to the boil abs reduce to a simmer for 10 minutes.
β€’Add the sauce to a blender. If you want to add a little soy cream, add this now and blend.
β€’Return the sauce to the pan and heat until the tempeh is ready.
β€’I served mine with brown rice, kale, extra green onion and a side of broccoli πŸ₯¦ πŸ₯¬
