~ Tempeh Bolognese ~

Stop what you’re doing and save this recipe! ⭐️

As you probably know by now, I LOVE my bolognese recipes. It’s always my go to favourite meal and I’ve just made it better by using tempeh! So quick and easy and high in plant power protein 🌱

~

🍃 200g tempeh
🍃 1/2 red onion
🍃 2 carrots peeled and chopped
🍃 150g mushrooms
🍃 2 tsp verylazyfooduk garlic
🍃 1 tin of chopped tomatoes
🍃 2 Tbsp tomato purée
🍃 1 Tbsp olive oil
🍃 1 tsp Italian herbs
🍃 oxo no beef stock cube mixed with around 150ml of water
🍃 1 Tbsp tomato ketchup
🍃 Spaghetti
🍃 Salt & pepper

•Add the garlic, carrot and onion to a food processor and pulse until it’s finely chopped.
•Add the oil to a frying pan and once hot, add the onion mix to the pan. Fry for 5/10 minutes.
•Add the mushrooms to the food processor and pulse until finely chopped. Add them to the frying pan for another 5 minutes.
•Chop a block of tempeh into cubes and add them to the food processor and again, pulse until chopped. Add the tempeh to the pan and fry for another 5 minutes.
•After this, add the chopped tomatoes, tomato purée, herbs, tomato ketchup and oxo cube mixed with water to the pan, bring to a gentle simmer for 15/20 minutes.
•Cook your pasta according to the packs instructions.
•Check the Bolognese mix and season with salt & pepper if needed.
•Once cooked, mix a little Bolognese sauce with your drained pasta, pop in a bowl and add more Bolognese on top.
•I served mine with homemade garlic bread and violife_foods cheeze.
