I had a moment of feeling healthy so decided to create this green noodles dish. It’s super delicious and super filling!

I used tescofood rice noodles and for the sauce you simply blend:
40g cashews (soaked for 10 minutes)
Handful of sunflower seeds
Handful of edamame beans
Handful fresh coriander
2 tsp verylazyfooduk garlic
1 tbsp miso paste
Squeeze of a lime
Plant based milk (enough to create a sauce)
Heat the sauce and noodles and I then topped mine with pumpkin seeds, fresh coriander and edamame beans 🌱
