I couldn’t decide what photo looked better, so I stuck both up! Let me know which one you think is best? 📸

Another recipe from the bosh.tv speedy cookbook and what a beaut it is too. I’ve made it before and it always goes down a treat in my house 💚

Super easy to make – here’s how I made mine (slight changes to the recipe) and pretty please hit save ⭐️

Serves 4:

•Add a little oil to a pan and add half a chopped onion and one chopped carrot. Cook for 10 minutes.
•Add to the pan two chopped red peppers, 3 cloves of crushed garlic and 1 tsp of caraway seeds. Fry for one minute.
•Add to the pan one tin of chopped tomatoes, 400 ml of veg stock, 2 broken up bay leaves, 1 tbsp of smoked paprika and 1 tsp of caster sugar. Bring to a simmer.
•Drain two tins of cannellini beans and add to the pan. Simmer.
•Make the dumplings.
•Chop a handful of parsley and add to a bowl.
•Add 150g of flour, 1/2 tsp of salt, 1 tsp of baking powder and mix.
•Make a well in the middle and add 50ml of olive oil, 75ml of plant based milk (I used oat) and 1 tsp of mustard.
•Mix together to form a dough and make into small balls.
•Add the dumplings to the pan, pop on a lid and simmer for 8 minutes.
•I served mine with some broccoli and oatly oat fraiche
