Dandan noodles with mixed veg topped with crispy vegan mince – a perfect Friday night fakeaway 💚

Here’s how I made this beaut of a meal. I tend to just whack things in a pan and hope for the best and this meal turned out incredible 🌱

Method – Serves 1

•Heat a little sesame oil in a pan and fry 3 sliced mushrooms and half a red pepper.
•Add two gloves of crushed garlic and fry for another few minutes.
•Add to the pan 2 tbsp of soy sauce, 2 tsp of miso paste, a little sriracha sauce, 1 tbsp of cashew butter, 300ml of veg stock and any additional veg – I used green beans and broccoli. Bring to a simmer.
•Whilst that’s simmering, fry off some meat free mince.
•Once browned, add some soy sauce and hoisin sauce.
•Cook noodles according to packs instructions then add to the sauce.
•Tip the noodles and sauce in to a bowl, top with the crispy meat free mince, green onions, sesame seeds and parsley or coriander 🌿
•Enjoy
