~ Crispy Tofu Noodle Salad With A Satay Sauce ~
Happy Saturday everyone and what a delicious lunch this was! When I first purchased tofu I was quite frankly terrified! I thought it would taste of sponge, but how wrong I was! 💚
Here’s how I made it – please hit save ⭐️ and let me know what you think of this dish. Would you eat it? 💎
•Press your tofu if needed (I use tofooco so I just squeeze out the excess water) and coat in cornflour. Cut into slices.
•Pop some oil in a pan and fry the tofu. Once it’s getting nice and crispy, I added some raynersfoods coconut aminos or you could use soy sauce.
•Meanwhile make up a salad. I used rocket salad, tomato and red onion.
•Cook noodles according to packets instructions.
•Make your satay sauce. Simply mix 2 tbsp peanut butter, 1 tsp soy sauce or tamari
1 tsp maple syrup.
•Once the tofu is cooked. Add the noodles on top of your salad, top with tofu, your satay sauce and add some chillis and spring onions on top.
