~ Creamy Sun-Dried Tomato Pasta ~
This recipe is a dream. I made it just for myself and within minutes, my son wanted to try some and ate half! Creamy, super easy and tasty – what more would you want?!
Here’s the recipe ⭐️
🍃 1 tsp olive oil
🍃 2 cloves garlic, crushed
🍃 1 tsp Italian herbs
🍃 70g sun dried tomatoes in oil
🍃 Handful of cherry tomatoes
🍃 1 Tbsp plain flour
🍃 200ml soy milk
🍃 1 Tbsp tomato purée
🍃 vegan parmasan
🍃 Salt & pepper
•Warm the olive oil in a sauce pan.
•Add the garlic and sauté for one minute. •Stir in Italian herbs, the chopped sun dried tomatoes, tomatoes and the flour and cook another minute.
•Stir in the soy milk and bring to a simmer and let thicken two minutes.
•Stir in the tomato paste and the vegan parmesan.
•Transfer the sauce to a blender, add the nooch and process for a minute or two until you have a smooth creamy sauce.
•Pop the sauce back to the pan and season.
•Cook the pasta.
•Once the pasta has cooked, add a little pasta water to the sauce.
•Drain the pasta and mix with the sauce.
•Serve and enjoy 💚
