~Chickpea Curry Topped With Crispy Tofu~
Have you ever started cooking one meal and ended up cooking something completely different?!
Well, that’s what happened to me today! I started cooking chickpeas with the intention of making a stew but ended up making a curry thanks for some tofooco nearing its end date and some freeandeasyfoods curry paste 💚
This turned out AMAZING 🤩
•Pop a little oil in a pan and fry half an onion
•After a few minutes, add two crushed cloves of garlic and fry for a few more minutes
•Add one tin of chickpeas (including the water), one tin of chopped tomatoes, some broccoli, one veg stock pot, 3tsp of smoked paprika, 1/2 tsp of cumin and half a jar of freeandeasyfoods curry paste. Stir and bring to a simmer.
•Meanwhile break up your tofooco tofu and coat with cornflour.
•Add some oil to a pan and when hot, add your tofu.
•Fry until crispy.
•Serve your chickpea curry, top with your crispy tofu and Enjoy!
