~ Cauliflower, Potato & Lentil Curry ~
What’s everyone’s spice level for a curry?
I love a curry and this one tasted amazing. The perfect amount of spice (for me) served with a delicious garlic naan 🍛

🍃 1 head of cauliflower
🍃 1 medium potatoes
🍃 ½ cup red lentils
🍃 1/2 medium onion
🍃 2 garlic cloves
🍃 Tenderstorm broccoli
🍃 1 can chopped tomatoes
🍃 ½ a can of coconut milk
🍃 1 curry paste pot
🍃 1 tsp turmeric
🍃 1 tsp paprika
🍃 ½ tsp cayenne pepper
🍃 ½ tsp cumin
🍃 300ml veg stock
•Dice the onion and crush the garlic, add to a pan with a little oil (or water) cook for 5/10 minutes.
•Whilst that’s cooking, clean the cauliflower and cut into florets, peel the potato and cut into bite size chunks and rinse the lentils.
•Stir in spices to the onion and garlic, cook for another minute.
•Add tomatoes, coconut milk, stock – I used knorruk , curry paste pot – I used pataksuk korma ed by the lentils, potatoes, broccoli and cauliflower.
•Bring everything to a boil, cover and let simmer on low heat for about 20/30 minutes or until potatoes and cauliflower have softened, stirring occasionally.
•I served mine with rice and clayovenbakery garlic naan
