~ Avocado & Chickpea Pasta Sauce ~

If you’re looking for a creamy pasta sauce that super healthy, then this one’s for you 🌱 Please hit save ⭐️ and let me know if you make it 💚

Sauce ingredients:

🍃 1 tbsp olive oil
🍃 1/2 chopped onion
🍃 Handful of edamame beans
🍃 1 avocado
🍃 2 garlic cloves, minced
🍃 1 tin drained canned unsalted chickpeas
🍃 300ml oat milk
🍃 2tbsp nooch
🍃 1 tsp salt
🍃 1/2 tsp black pepper
🍃 Spring onions

•Heat the olive oil in a pan and add the chopped onion, edamame beans and garlic.
•Cook for 5 minutes.
•Place onion mixture, chickpeas, milk, nooch, avocado, salt, and pepper in a blender; process until smooth.
•Add to cooked pasta and sprinkle some spring onions on top.
•Enjoy!
